Victoria Rinsma Triumphs at S.Pellegrino Young Chef Academy Competition, Will Represent Canada in Milan

Toronto – Oakville’s own Victoria Rinsma, a rising star from Hexagon Restaurant, has claimed the prestigious title of Canadian regional winner at the S.Pellegrino Young Chef Academy Competition 2024-25. The accomplished young chef will now take her culinary talents to Milan, Italy, to represent Canada at the Grand Finale in October 2025.

Rinsma wowed a panel of esteemed judges—chefs Normand Laprise, Jason Bangerter, and Nuit Regular—with her exceptional signature dish, “Across the Sea and Home Again.” Her inventive and refined creation not only showcased her technical prowess but also demonstrated her flair for flavors that celebrate her roots and global inspirations.

Rafael Covarrubias, the executive chef at Hexagon Restaurant and a seasoned mentor, played a pivotal role in Rinsma’s success. Covarrubias provided expert guidance and insight, helping to shape the dish that ultimately led to her victory. His mentorship was a testament to the collaborative spirit and commitment to excellence that the team at Hexagon embodies.

The Canadian Regional Finals also celebrated three other talented young chefs who received collateral awards for their impressive culinary achievements:

  • Clement Cavoret from Quebec was honored with the Acqua Panna Award for Connection in Gastronomy for his dish, “Deerly Not Wasted.” The dish resonated with the judges for its emphasis on sustainability and respect for ingredients.
  • Sébastien Rémillard, also from Quebec, earned the S.Pellegrino Award for Social Responsibility with “The Evolution of My Life,” a dish that highlighted his dedication to ethical and community-focused cuisine.
  • Mary Yap from Toronto secured the Fine Dining Lovers Food for Thought Award with her creation, “Duck Sinigang (Tamarind Consommé).” Yap’s dish stood out for its thoughtful approach, blending Filipino culinary traditions with a fine dining sensibility.

As Victoria Rinsma prepares for the Grand Finale in Milan, she carries with her not just the hopes of her team and mentor but also the pride of the local culinary community. All eyes will be on Milan in October 2025 as she competes on the world stage, aiming to bring home the ultimate honor.
