Quesada Rolls Out Limited-Time Birria-Inspired Menu Across Canada

New lineup features Barbacoa Beef and Pulled Shiitake Mushroom, available until December 10

Toronto, ON – Quesada Burritos & Tacos has introduced a nationwide limited-time menu inspired by birria, the slow-braised dish that originated in Jalisco, Mexico and has since become a global food trend.

Available now through December 10, 2025, the new offerings allow Canadians from coast to coast to enjoy birria flavours across five different formats: tacos, burritos, quesadillas, nachos, and bowls.

Headlining the lineup are two protein options:

• Slow-Braised Barbacoa Beef

• Pulled Shiitake Mushroom (a savoury plant-based alternative)

Both are marinated with chiles and spices for a tangy, melt-in-your-mouth texture. The dishes are paired with Quesada’s signature birria dipping sauce – served on the side for dipping or drizzling, and also used to coat tortillas before pressing, creating an extra layer of flavour.

Jason Baker, Vancouver-native chef and co-lead of Quesada’s culinary team alongside Ilona Spudas, emphasized that the chain’s approach was about balance.

“Our goal was not to replicate the authentic stew you’d find in Jalisco, but to create a flavour adventure that introduces the richness of birria to anyone walking into a Quesada,” Baker said.

The new menu rollout marks the first time a Canadian quick-service chain has introduced a birria-inspired menu nationwide, reflecting Quesada’s commitment to blending authentic flavours with accessibility.
